With organic cultivation, the agave feeds from sun and rains during the 8 9 year span it takes to reach maturity. The agave is cooked in rustic overns that are ignited with Tepehuaje (Lead Tree), a type of wood endemic to this regeion. A mix of savory earthy flavors and sweet fruit with texture, complexity, and acidity.
